This Chicken Sukka recipe was recommended to me by a friend of mine who usually makes this on his trekking adventures.
It requires the least number of ingredients and yet is as tasty as other fancy Chicken Sukka recipes. It also requires less observation time while cooking. Which means, you can make a quick snack or some drinks in the free time. Spice level for this recipe can be adjusted as per your taste buds by increasing the raw chilly count or adding an extra table spoon of chilly powder.

Recipe Ingredients

  • 250 grams - chicken medium size pieces
  • 2 tbsp - lemon juice
  • 1 tbsp - turmeric powder
  • 6 tbsp - Cooking Oil (Groundnut or Sunflower)
  • 4 tbsp - Ginger Garlic Paste
  • 2 tbsp - Onion Garlic Powder
  • 2 tbsp - Chicken Masala
  • 1 small - cinnamon stick
  • 2 tbsp - Salt
  • 1 tbsp - Chilly Powder
  • 2 large - Onions Finely Chopped
  • 2 large - Chillies (Sliced in 4-5 sections)

Instructions

1: First, wash the chicken pieces well. Drain all the water and add lemon juice and sprinkle the Turmeric powder over the pieces. Let this sit in the fridge for 30 minutes while you organize the rest of the stuff. 30 minutes is the minimum duration for marination and something around 2-3 hours would be ideal.

2: In a shallow Kadhai or a deep pot, heat 2 tbsp oil. When the oil is hot enough, add the ginger garlic paste and saute for 1 minute.

3: Next, add Onion Garlic Masala (Kanda Lasun Masala), chicken masala and fry for 2-3 minutes on a low flame.

4: Next, add the finely chopped onions, tomato, sliced Chilly, cinnamon stick and 1 tbsp salt into the cooking pot. Cover the pot with a lid and let this sit for 5 minutes on a low flame. Ensure that the lid has some space to let out the hot air that rises while the ingredients are getting shallow fried. Stir occasionally in between to ensure that all of the ingredients mix well. Salt will extract the juices from the onion slices and will make the mixture similar to a paste.

5: After 5 minutes, open the lid and add the marinated chicken pieces into this mixture. At this step, add 1tbsp of salt again and 1tbsp of chilli powder onto the chicken pieces. Mix the pieces well and let this cook without a lid for 5 minutes. Do not cover the pot during the intial phase as this will lead to excess water in your Chicken Sukka.

6: After 5 minutes of open cooking is done, cover the pot with a lid and cook for 20 minutes more. During this process, ensure that you stir the chicken pieces after every 5 minutes. You should also ensure that the heat level of your stove is at moderate to low temperature.

7: That is it. So after 30 minutes of cooking, your Chicken sukka should be ready to be served with either Rice or Chapati.
